Suzi’s Sugar Cookies

In case you haven’t noticed, I’m not your average fitness instructor. When it comes to special event classes, I almost always make a treat for my participants. This past Monday I taught a “Summer Beach Party” Yoga Class, and as part of the festivities, I made these cute summer-themed sugar cookies.

I hadn’t planned to share my recipe so I don’t have any fancy photos but a couple of people have asked if I would share it because they enjoyed them so much so here it is!

Suzi's Sugar Cookies

These delicious sugar cookies ae perfect for cut out cookies all-year round.

Prep Time 1 hour 15 minutes
Cook Time 10 minutes
Total Time 1 hour 25 minutes

Ingredients

  • 3 cups all-purpose​ flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/8 tsp salt
  • 1 cup butter
  • 2 eggs
  • 1 1/2 cups sugar
  • 1 tsp vanilla

Instructions

  1. Combine flour, baking powder, baking soda and salt in a large bowl.
  2. Using a fork or pastry blender (or shred using a cheese grater - which is my easy peasy way to cut in butter) cut in butter until mixture is crumbly.
  3. In small bowl beat eggs, adding in sugar and vanilla. Mix until nice and smooth. Add egg and sugar mixture to flour and butter mixture and stir until dough forms. I find after an initial stir it is easier to dump out on the counter to knead dough together. Add 1/4 tsp of water as needed to help dough come together.
  4. Put dough back in the bowl, cover and refrigerate for 1 hour to make dough eaiser to handle.
  5. Heat oven to 375F. Lightly flour surface and roll out 1/3 of the dough using a rollingpin until dough is 1/8 inch thick. Cut out using cookie cutters. Place cookies 1 inch apart on a parchemnt lined cookie sheet. Repeat with remaining dough.
  6. Bake for 6-10 minutes until adges are golden brown. Move immeditaely to cooling racks and allow to cool completely before decorating.

Notes

Yield dpends on the size of the cookies you choose to make.

If you want to decorate cookies with coloured sugar or sprinkles, add these before baking so it will stick to the uncooked dough.

These are pretty easy cookies to make, and I think what makes them taste so good is taking the time to combine the wet ingredients before adding them to the flour/butter mixture so that everything mixes really evenly.

I get so many compliments anytime I make these cookies, and they are pretty foolproof, pair it with a cute cookie cutter and some cookie icing and you will be the talk of the cookie town 😉
