Molten Chocolate Cupcake

Welcome to the very first Cupcake of the Month recipe/post!  Like my cupcake image?  I’m having my designer (aka husband) make me a cute little button to put on my sidebar to link to the current cupcake of the month recipe, and then the whole list of past months will be linked under the recipe section.

For this first recipe, I must have still had lava cakes on the brain because when I saw a recipe for molten chocolate cupcakes I knew I had to give them a try!

I followed the recipe loosely (I rarely follow recipes exactly…) and when it came time to put the batter in the cupcake liners it just didn’t seem right

it was such a dry dough, drier than any cake, cookie or brownie recipe I’ve ever made.  I really thought it was going to be a total write-off, but I decided to give the recipe the benefit of doubt and carry-on and I’m glad I did, while they weren’t like your traditional cupcake (they have more of a chocolate pound cake or brownie consistency) they were very tasty and had a very short life span – I don’t believe they lived to see the sun set…

Molten Chocolate Cupcake

Yield: makes 6 cupcakes

Ingredients

  • 4 Tbsp margarine or butter (softened)
  • 1/2 cup white sugar
  • 1 egg
  • 1/2 cup flour
  • 1 Tbsp cocoa
  • 1.5 oz semi-sweet chocolate

Instructions

  1. Pre-heat oven to 375 and place 6 paper liners in a muffin pan.
  2. Mix margarine, sugar, egg, flour and cocoa in a large bowl using electric mixer. Beat until batter is smooth.
  3. Spoon 1/2 batter into paper liners.
  4. break semi-sweet chocolate into 6 equal portions and place the chocolate in the centre of each cupcake.
  5. Spoon remaining batter over the chocolate to cover completely.
  6. Bake in over for 20 minutes or until springy to the touch.
  7. Let cupcakes cool for at least 5 minutes before serving.

One thing I really like about this recipe is that it only makes 6.  So often recipes make like 2 dozen cupcakes and even if you cut the recipe in half you’re left with a dozen cupcakes to eat.  Not that, that is really a terrible problem, but it is certainly nice to have a recipe that make just a small batch for those times you don’t want a whole slew of cupcakes!

Despite the impressiveness of the molten centre, these are a super easy cupcake to make, okay one last time let’s take a look at the ooey gooey delightfulness that is the molten chocolate cupcake…

    Looks like they turned out perfectly! Did you try any cold ones? Just curious what the inside consistency would look like on those!

      I didn’t get to try any of them cold, they didn’t live that long….. I plan on making them again so I’ll try harder to let one cool to see what happens!

    Nomnomnom! My hubby loves molten lava cake, so I know he would like these :) I bet they are best fresh out of the oven, and since there are 5 of us, they would be gone in one sitting!

      There’s something nice to be said about a dessert that gets eaten in one sitting without anyone having to gorge themselves on it. And bonus for Mark – he could get the 6th one!
