Microwave Brownies for One {or Two}
What’s a brownie without iced cream??
I don’t think it’s a secret around here that I love food – and that brownies tend to top my list of favourite deserts to consume. Knowing this, it should come as no surprise that I have spent a long time finding and perfecting a good microwave brownie recipe. A mug recipe to be more specific.
You see, just because I love brownies, doesn’t mean I always want to make a whole batch of brownies, sometimes a girl just wants one {big} brownie! In the past I’ve made a lot of microwave mug cakes {meaning they are cooked in a coffee mug} and microwave brownies and there has always been two problems #1) they are dry or gloopy {that’s a technical term} #2) the egg. There is always an egg and the cake or brownie turns out tasting too eggy. No thanks.
Well my friends, I have for you an eggless microwave brownie that takes less than 5 minutes to make and cook and isn’t dry, or gloopy or eggy.
To ensure quality control I have made this twice (and am thinking tonight might be another brownie night…) and have even obtained the J stamp of approval, quite a feat if you ask me!
Ingredients
- 2 Tbsp butter (melted)
- 2 Tbsp water
- 1/4 tsp vanilla
- pinch of salt
- 4 Tbsp sugar
- 2 Tbsp cocoa
- 4 Tbsp flour
Instructions
- Mix butter, water, vanilla and salt in a large coffee mug.
- Add cocoa, sugar and flour stirring to combine really well after adding each of the dry ingredients.
- Put the mug into your microwave and cook for 45-90 seconds (depending on your microwave). My microwave is 1200 Watts and I find 45-55 seconds cooks it perfectly. The centre is cooked but the outside edges hasn't had a chance to dry out.
- Err on the safe side at first, it's easy enough to put it back in for a few more seconds if need be.
- Top with iced cream and enjoy!
I seriously love this recipe. The calorie count is still quite hefty (540 calories for the whole thing) but if you didn’t want to be a pig like me you could share it with someone else bringing the calorie count down to 270 for 1/2 (without the iced cream of course…). But even if you did eat it yourself, certainly it’s less damaging than eating an entire batch of brownies!

Why bother working out if you’re going to eat crap like this! Not meaning to be offensive but I want to compel you to look into a plant-based diet, even with dairy and meat, because it’s much healthier and will prolong your life.
Why bother leaving a negative comment on someone’s blog if you’re going to make up fake email/website address so nobody knows who you are?
Just wanted to say this has become my go-to recipe for when I really want a brownie and don’t want to wait OR fill the house (and my kids) with brownies! Since it’s eggless it’s easy to cut in half (I do this to avoid making myself sick, since as everyone knows it’s sacrilegious to throw away chocolate just because you happen to be full). Thanks for sharing!
