
Let me start off my saying if you are looking for a healthy cookie recipe, stop reading right now. These aren’t healthy. But they are yummy! So if you were looking for a yummy cookie recipe continue on
Oatmeal Chocolate Chip Pizza Cookie
Ingredients
- 1 cup butter or margarine, softened
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 large eggs
- 2 tsp. vanilla
- 2 cups all-purpose flour
- 1 tsp baking sode
- 1 tsp baking powder
- 1/2 tsp salt
- 2 1/3 cup rolled oats
- 1/4 cup each of semi-sweet chocolate chips, white chips and peanut butter chips (I use 1 handful of each)
Instructions
- Cream butter and both sugars in a large bowl. Add eggs one at a time beating well after each addition. And vanilla. Beat.
- Combine flour, baking powder, baking soda and salt in a small bowl. Add to margarine mixture and stir until moistened.
- Add rolled outs and chocolate chips. Stir well.
- Line a large pizza pan with parchment paper. Empty cookie batter onto pizza pan and spread it out to cover the whole pan evenly. I find it easiest to flatten the dough by placing a piece of cling wrap on top of the dough and then pushing down with your fingers (the cling wrap keeps your hand from getting too messy). You could also use the bottom of a glass dipped in sugar to help flatten it out.
- Bake at 375F for 11-15 minutes until golden brown. Let cool slightly on a cooling rack then cut into thin pizza wedges & enjoy!

These are particularily addictive when eaten while warm with vanilla iced cream……
(trying one out while I wait for the ice cream to arrive!)
